Meet the Team

 Jason Stock — BREWMASTER

JASON STOCK BEGAN HIS CAREER WITH SQUATTERS PUB BREWERY IN JUNE OF 2000 AS THE ASSISTANT BREWER. RAISED IN SALT LAKE CITY, UTAH HE FOUND HIS PASSION FOR BEER LATER IN LIFE. HE REMEMBERS A LUNCH WITH A WORK ASSOCIATE WHERE HE TRIED "BEERS AROUND THE WORLD" AT A PUB. HAVING NEVER REALIZED THERE WAS SUCH A VARIETY OF BEERS HE QUICKLY BECAME AN AVID BEER GEEK, MAINTAINING A BEER TASTING WEBSITE AND HOME BREWING. AS FATE WOULD HAVE IT, HE FOUND HIMSELF IN NEED OF A PART TIME JOB SHORTLY AFTER RECEIVING A BA IN PUBLIC COMMUNICATIONS AT THE UNIVERSITY OF UTAH. ON A TRIP TO THE BEER NUT TO SHOP FOR HOME BREWING INGREDIENTS HE NOTICED A SMALL POSTING FOR THE ASSISTANT BREWER POSITION AT SQUATTERS AND DECIDED TO THROW HIS HAT INTO THE RING. "IT WAS THE ONLY INTERVIEW I'VE EVER BROUGHT A SIX PACK TO" HE RECALLS. ELEVEN YEARS LATER HE WAS GIVEN THE REIGNS AS THE BREWMASTER FOR SQUATTERS PUB BREWERY. "I'M EXCITED FOR THE CHANCE TO CONTINUE MAKING THE GREAT BEERS WE'VE ALWAYS MADE AND TO BE ABLE TO EXPLORE STYLES WE HAVEN'T FOCUSED ON IN THE PAST."

Peter Cole —  FOUNDING PARTNER

Co-founder of Squatters Pub Brewery, Peter was born and raised in Kent, prime U.K. hop country. With his elder brother, Clive, being an avid home brewer, real ale appreciation became regular duty at his local Kentish pubs.

Peter moved to Park City, Utah, in 1979 where he met Jeff Polychronis, Squatter’s other founding partner. They have been friends and business partners for over thirty years. They brewed many hoppy home brews together before taking the leap to open Salt Lake’s original brewpub.

Squatters environmental bent is not new. During the building renovation, beams reclaimed from a bridge to the Anaconda Mine in Tooele were used in the structure for the 3-level brewery, and separate the brew house and fermentation tanks from the bar. Original cobble stones reclaimed from West Temple Street during road reconstruction in 1989 were used to build the fireplace. Squatters opened for business on September 5th 1989. Squatters became an e2 business in 2004, and was awarded Environmental Company of the Year in 2005 by the Recycling Coalition of Utah.

Although Peter has long since relinquished his brewery wellies to Dan and Jenny, he remains an avid beer lover, always on the lookout for interesting beers during his travels.
